Something on the chefs…. Chef Alfredo Russo found passion in cooking at the tender age of 13 and was further fueled when he completed hotel management school and did his apprenticeship at three different Michelin-starred restaurants. Hailing from Piedmont, Northern Italy, Alfredo believes that there is no sincerer love than the love for food. He earned a Michelin Star for his restaurant, Dolce Stil Novo, which still holds the title for more than 20 years. His culinary style carries on classic Italian cooking traditions, though his food creates a new way to look at Italian cuisine.
Chef Pino Cuttaia on the other hand comes from the south of Italy, Sicily and is a self taught chef who left his job at the Olivetti factory to pursue his dream career. His journey began in two of Piedmont’s Michelin-starred restaurants where he picked up necessary skills in the professional kitchen. In 2000, he opened his first restaurant, La Madia in Sicily and earned a Michelin Star in 2006 and in 2009 gained his 2nd Michelin Star. He is known for his creativity in reinventing classic Sicilian dishes into something artistic and vibrant. With dishes bearing the names:  ‘Anchovy Painting’, ‘Cloud of Caprese’ or ‘Octopus on the Rocks’ says it all.
This collaboration is indeed a culinary masterpiece waiting to be savoured by the island’s foodies. “We are proud to have these very talented chefs with us this year to commemorate our 5th year of operations. This will definitely elevate the culinary scene in Kuta, giving the locals here a taste of the best from Italy”, says Dario Orsini, General Manager of the resort who is also a native from Naples, Italy.
