Chef: Bram – Meja Kitchen & Bar Betutu Duck

Meja Kitchen & Bar has been focusing on great Indonesian cuisine over the past few years. For this, their Executive Chef, Bram, doesn’t want to miss a thing, especially on introducing more local specialties to Seminyak foodies. One dish that he would recommend is their Betutu Duck (99k) which emphasizes the Balinese art of spicing. Using locally-sourced ingredients, it uses a quarter duck which has been through several cooking methods to let the flavors of Balinese spices really absorb. These methods include marinating and boiling it with the Balinese seasoning to richen the flavors, as well as pan-searing for its crispy texture and golden color. Last but not least, the topping which is the same Balinese seasoning that just ties everything together. The duck comes alongside steamed rice and veggies, plus three sambal options; allow yourself to venture deeper into the exotic world of Balinese spices.
