Today’s Specials: Spice | Sticky Pork Ribs, Cassia Bark & Ginger Glaze

Spice is an Indonesian inspired restaurant that encompasses sustainable local produce and Western styles of cooking in their meals. With a wide variety of dishes that adapt to the seasons, one of the favorites is the Sticky Pork Ribs, Cassia Bark & Ginger Glaze. The inspiration of the dish comes from the local Babi Kecap Manis which has been revisited to suit the concept behind Spice. First the ribs are slow cooked on the grill until the meat reaches optimal temperature to be quickly fried. It is then glazed and infused with cinnamon, Basa Gede (a mix of nuts, ginger, chillies), Kencur and Galangal which are root parts of the ginger family, and served with spicy sauce and local condiments. All of these ingredients combined make a hell of a dish. Get it for a mere 155k++
