In Italian, the word ‘scottadito’ means burned fingers. The reason the dish is named as such is circumstantial; because the lamb chops are so delicious, you can’t resist eating them sizzling hot, straight from the grill and alas, burning your fingers. This was also the case with Jamie’s Italian lamb scottadito. The lamb chops were tender and juicy, grilled under a brick until its just right, then served with polenta chips, pickled red onion, smashed nuts, fresh herbs and spicy yogurt. The Polenta chips that accompany the chops were fried into perfection; crispy on the outside, tender and tasty on the inside. To properly enjoy the meal, mix the herbs and spicy yogurt on your plate, sprinkle the nuts, then dip lamb chop slices into the mixture before you consume them. Take bites of the sourly refreshing pickled red onion to compliment the taste. Suffice to say, Jamie’s Italian’s lamb scottadito is, as an Italian would say, semplicemente perfetto!
