Gardin, located in front of Mirror Club, has been around for quite some time. Surrounded by shrubs and greeneries, Gardin’s architecture is a rendition of a Victorian garden house in a somewhat more contemporary way. This aesthetic juxtaposition of old-fashion and contemporary reflects Gardin’s cooking ethos, as seen on one of their best selling dish that has stayed on their menu since the first opening day; the Salmon Coulibiac. At IDR 142++, the dish consists of rissoto, creamed spinach, mushroom duxelle, hollandaise espuma, and mapple crisps. Certain molecular gastronomy techniques were employed by the chef in the process, which resulted in a dish that retains the basic characteristic of the original recipe, with a finese achievable through modern techniques. For instance, regular Salmon Coulibiac can get a bit stuffy, due to the combination of risotto and the pastry that envelopes the salmon, but the chef skillfuly combines salty, sweet, savoury, and sour, into one delicious dish that’s fulfilling without being over the top.
