Beef Kalio is a traditional Sumatran dish very similar to rendang and Bistro loosely interprets it with a modern Western twist. The huge chunks of US Angus beef rib have a rendang sauce foam and sit atop chili infused mashed potatoes. It also comes with Indonesian sayur kapau which is a curry-like dish of mixed vegetables. The different flavors surrounding this dish in addition to the beautifully succulent cubes of beef is something worth going to Gardin to specifically seek out and enjoy.
